To decide who is to serve at the start of a match you spin a racket.
Usually rackets will have some distinguishing mark to differentiate one side from the other. It might be a YOU and ME printed on the shaft or a brand logo on the racket butt, UP or UPSIDE-DOWN. The non-spinner gets to call and if they call correctly they become the server. If they call incorrectly the 'spinner' serves.
Don't forget this doesn't have to be done for every game as the winner of the previous game gets to serve first in the next game.
